Recipes: Grilled Eggplant
• Slice the eggplant into 1/4-inch-thick rounds or slices.
• Drizzle or brush the eggplant slices with olive oil, and season them with salt and pepper.
• Preheat a grill and add the eggplant slices and grill for 2 to 3 minutes per side.
• You should be able to easily pierce the slices with a fork; they shouldn’t be tough or spongy.
• The grilled eggplant slices are ready when they’re completely tender and grill marks form on both sides.
